How are you? Its Mid-week, what have you achieved so far this week and what do you hope to achieve during the remaining part of the week?

Yam is a carbohydrate popular in Nigeria. Often it is eaten boiled in water or fried in groundnut or red oil.
I wanted my yam to taste a little different this day, so I grilled it.

How was your weekend? I hope you had a great one. I had a nice enough weekend and twice this information which we probably all have heard of before was reiterated to me. CONSISTENCY. To see result in whatever I do, I have to be consistent and so do you. So if you and/or I consistently do a thing that would produce a negative outcome, that is just what would happen, but if we carry out activities that would bring about positive outcome then that's what we should expect. Remember to keep doing what you need to do, be consistent, despite how you feel. That was my weekend lesson in a nutshell what was yours? This weekend I made pancakes and I made it three ways. Classic, Fruit filling and Hot chocolate powder pancake.

Liars are thieves: Lying is tantamount to stealing.

A friend of mine was telling me a story of some lady whose husband had basically deceived her. He had a child before he got married to her and he didn't tell her. As if this isn’t bad enough, his family knew about it and also kept it away from her. To add salt to injury his family is closer to the other lady than they are to her.

Today is fried rice day! Stir fried, stir fried. Pretty sure quite a number of people have had stir fried rice in one form or the other?
This Nigerian stir friend uses ingredients peculiar to the Nigerian people. Cray fish and suya.


Zobo 'Apple Smoothie

Making smoothie African, making it Nigerian!!!

Zobo is a relatively popular drink in Nigeria made by boiling dry zobo leaves in a pot of boiling water and then straining it when it is cold.

That's the base.

There are however many variations. Ginger could be added, lemon, lime, fruits and flavor. Sugar is usually added when it is cold.

Today's meal is a play on poached eggs and stir fried vegetable and spaghetti. Poached egg, it should typically be cooked to medium level such that the yolk is still juicy and runny but the client was taken into consideration and so the poached egg was cooked all the way through.

Saved from what could have been #gas burn or #explosion. #testimony



This is my #friend's leg, Uche @oochay_ I like her #shoes, unfortunately the different #angles of the shoes are not #captured here so you don't get to appreciate it as much as I do.

But I digress.... This morning, I shared my #testimony with Uche and I want to share it with you. I woke up this morning and got a nodging to do something on my phone but I disobeyed. Later on, I went to the #kitchen to make #breakfast. I turned on the #knob on the #gas #cylinder. I fetched or had fetched water in a pot, I put in my plantain and proceeded to light the #matches. As I lit it I just heard and 'saw' puff. Apparently the knob on the cooker had been on and so gas was already coming out ready for #fire to #marry it. I thank #God that it wasn't beyond what happened today because it could have gone any other way. I could have decided to go wash plate and then #light the matches or do something else and that would have allowed more gas to build up. Maybe if I was attentive to the #morning nodge this would not have happened at all. But one thing Is sure, the #Grace of God was available for me. #God turned what could have been a #mess into a #testimony, #blessing and gave me appreciation for Him anew. Remember to listen to God. Remember to put your gas knobs off on all sides and it doesn't usually hurt to double check.

Concentrated pepper and onion chutney

I have always wanted to make a concentrated rich pepper sauce that would be ready for use basically any time and I set about doing that. This is a homemade concentrated pepper and onion chutney/sauce that you can easily make #DIY #Chutney #Sauce #Pepper. There is so much you can do with it. #Garnish. #Marinate. Sauce for #carbohydrate or #vegetable. Add to your #pancake mix before frying or even yogurt before freezing.

Home made Boli and oven grilled tilapia fish

My friend Ibukun had her traditional wedding in November of 2015 and one of the delicacies served was Boli (locally grilled plantain) and a tomatoes-pepper sauce of sort. I was quite hesistant to take it because I was not sure I would enjoy it. Urged by Addurrah (our first fashion teacher) I went on to try it. While I cannot say for certain if this was the first time I had eaten Boli, I can say for certain that I enjoyed it.
