Grilled egg washed yam and red bell pepper sauce

Hello diamonds, 

How are you? Its Mid-week, what have you achieved so far this week and what do you hope to achieve during the remaining part of the week?

Yam is a carbohydrate popular in Nigeria. Often it is eaten boiled in water or fried in groundnut or red oil.
I wanted my yam to taste a little different this day, so I grilled it.

Grilled yam







Ingredients:
1/4 medium size yam
1/2 teaspoon of salt
2 eggs
Water
Groundnut oil
Red bell pepper sauce

Directions:
Cut the yam into 1/2 to 1/4 inch slices. To a pot of water on the cooker, add 1/4 teaspoon of salt, the yam and allow to boil. Once the yam is soft but firm remove from the pot and place in a bowl of cold water to stop the cooking process. 

After about 2 minutes remove the yam from the cold water. Season the yam with the remaining 1/4 teaspoon of salt and then grease with groundnut oil. Divide the yam slices into two bowls. One would be oven cooked as is the other would be egg washed first. Grease foil paper and then place on the grilling tray in the oven. 

To one side of the grilling tray place yam slices from one of the bowls. 
Break open the eggs in a bowl and beat. The yam slices in the second bowl should be dipped one by one in the egg and then placed on the grilling tray.

Once the yam slices have all been laid, close the oven and allow to cook at medium to high heat. After 30 minutes open the oven, flip the yam then close the oven. After 15 more minutes check to see if the other side is as brown as you like it. If not check every 5 to 10 minutes till it is as brown as you want it.


When it is all ready, serve with red bell pepper sauce or any sauce of choice.
