Yamlette and Yam bake

So I did a little food experiment today and I want to share the recipe with you, so here goes.







Ingredients:
5 cups grated yam
1 cup blended onions
I cup shredded chicken 
3 eggs
2 cups grated carrot and cabbage 
Half cup groundnut oil
1 tablespoon baking powder 
1 teaspoon curry
1 teaspoon powdered ginger
2 knorr cube
2 tablespoons of dry pepper
Salt



How to:

Place eggs and oil in a food processor and process for about 3 minutes. Add baking powder, curry, ginger, knorr cubes and pepper to the food processor. Process for another 3 minutes then add the shredded chicken, blended onions, carrot and cabbage to the food processor and mix. 

Pour the processor mix into a bowl containing the grated yam and mix well. Taste the mix and add salt, pinch by pinch until you achieved a desired taste. Add some more pepper too if needed. Oil your baking bowl and pour the yam mix into the bowl.



 Place in a preheated oven. I use a gas oven so I placed it at medium-high heat. 

Allow to bake for 45 minutes then use a teaspoon to take out a bit and taste. If not done, leave in the oven to cook, checking intermittently every 10 minutes. It should be brown on the outside and moist on the inside. 



You have your Yam bake. 




Serve with tomatoe sauce or eat alone. 






For the Yamlette, put a tablespoon of groundnut oil in a frying pan and add a serving spoon of the yam mix into the frying pan, allow to fry and brown on one side, then flip gently and allow the other side to brown too. 

I personally prefer the Yamlette because it browns both sides and I like them brown and crunchy.
