Nigerian crayfish and suya stir fried rice

How have you been? Good I hope.

Today is fried rice day! Stir fried, stir fried. Pretty sure quite a number of people have had stir fried rice in one form or the other?
This Nigerian stir friend uses ingredients peculiar to the Nigerian people. Cray fish and suya.




Ingredients
20 pieces of beef suya
2 teaspons of crayfish
3 green bell pepper
2 spring onions
1 onions
1 cup long grain rice
Beef stock
2 knorr
2 teaspoons of dry pepper
4 tablespoons of groundnut oil
Concentrated chutney


Directions
Put your rice in a pot of water, and  put on a cooker to boil. Chop the suya, onions, green pepper and spring onions. Par boil the rice till it is almost done.Remove the rice from the cooker, pour into a strainer and run tap water over it.

Put the empty pot back on the cooker, add the oil, suya, onions, green pepper and spring onions. Save some of the green bell pepper and suya (or beef) for garnish. Stir fry for 5 minutes then add the crayfish, knorr and dry pepper. Stir fry for another 5 minutes then add 150 mls of the beef stock, cover the pot and allow to steam. Once the water is dry you are ready to serve and eat. Serve with the saved suya or beef. Garnish with the green pepper and concentrated pepper and onion chutney .
