I had been craving croaker fish for a while and I decided to make my own at home. Oven had an issue, but I didn't let that stop me, thank God for creative ideas. Mummy has fire wood and fire wood stand at home, so that's what I decided to use.<br />

Lesson: we can often find other ways to do things that really needs to be done.<br />
Like this blog post for example. I had hoped to send it out a while ago but one reason after the other became my excuse. However, I am sitting down in the airport, waiting to board and I decided to write this post and upload it, using my phone and regular MTN data.<br />
<br />
So the day I made the fish, I went to Garki ultramodern market and bought one frozen croaker fish. They don't sell one, they sell in Kilos and by the time they weighed it, the price came to about N2,100 or so.<br />
I took the fish home, put it in water to let it defreeze, then I mixed up my spice and did a dry rub<br />

Ingredients:<br />
One Croaker fish<br />
Two Knorr cubes<br />
One tea spoon of salt<br />
11/2 tablespoon of dry pepper<br />
1 tablespoon of fenugreek<br />
1 tablespoon of grounded cardamom<br />
1 tablespoon of Curry<br />
8 large potatoes (or equivalent of small potatoes)<br />

Wash the fish well then put in a bowl of a large try. Make a pocket in the belly of the fish. Mix the dry ingredients together and then rub inside and all over the fish. Don't forget your potatoes. Peel, wash and cut in slices. Add the potatoes to the bowl or tray containing the fish. Make sure the potatoes is coated in the the dry spice rub too. Leave to marinate for about 1 to 2 hours. After two hours you should grease foil paper and place the fish and potatoes in the foil and then in the oven. Allow to grill for about 1 hour and 30 minutes. This would probably be the conventional or modern way to go about it, but I did it the 'local' way. With the help of my sisters at home I set up a grilling spot using firewood, pot stand and the oven mesh. If you decide to do it this way, are allow the fire to burn for a while so that most of the initial smoke dissipates and does not end up in the fish. Once the fire seems stable, put the fish and potatoes, already in the foil paper on the mesh and then cover with a really large pan cover (one you can afford to let Brown). Leave to cook for about 1 hour and 30 minutes. Open to check and make sure the fish and potatoes are well cooked before taking it off and serving.<br />

I say a large croaker fish can probably fill up 2 or 3 adults at the most. Unless it's just a side dish, then it can go for more people. I had some chicken available too so I marinated it with some of the dry rub, at the same time as the fish and placed in a seperate foil and grilled when it was time to grill. So you can grill chicken or Turkey or perhaps shrimps this way too. Just make sure you time it currently and that you tapper down or up the quantity of spices based on the type and size of meat being grilled.<br />

Every time you take a break from something, returning back becomes a chore. So how does one get back to doing what they want to do or once did?
I am no expert but these are a few things that may help or starting point<br />
1. Pray. It is the key after all. It hands over whatever you want to do to God and lets you know if it's something you should do or not.<br />
<br />
2. Ask yourself why ,why did I start? Or why do I want to start? The reason can often put things in perspective and give us the push we need to start. So remind yourself of the why.<br />
<br />
3. Outcome(s): what is likely to be the outcome of the this new venture I am about to embark on or want to return to? The journey often seem hard if we take our eyes off the price. If we keep stirring at the beautiful end to come though, we are more likely to keep on.<br />

God has been wonderful to me and I have to tell of His wonders. You see my younger sister's wedding is on the 4th of March. As an elder sister it would do me great joy to be of help to her and to participate as much as I can in her wedding preparations and the wedding itself. With this in mind I did what a child of God should do, I took my desires and request to God. Note that my EDDs were 20th and 28th of February. However, I asked that God should please let this baby be born on Valentine's day. This would mean the child was coming at least 2 weeks to my sister's wedding, giving me enough time to heal and be of help to my sister. Besides my first two children came around 38 weeks, a day before or exactly on the 38th week and 14th of February would be the 38th week. I said this prayer hoping that God would honour me but not even sure I would get what I had asked for.</div>

Recently though I had developed diarrhoea and had attributed it to the akara I had eaten. Bean products make me stool more than normal, so I automatically credited it to the akara. After some days however, my mother thougt I should go to the hospital and get something for the diarrhoea. I went to the hospital, the Nurse greeted me in the normal endearing way and asked what I came for. I told her and she proceeded to check me. on checking me she gave me news I was not expecting. She said I was 5cm dilated.<br />
<br />
Do you understand what this means? My goodness. Any woman who has gone through labour would appreciate this mercy and wonder of God. God had allowed me to go into painless labour. I had no pain and I was contracting and somehow He had ordered my steps to the hospital at the right time. In fact the Nurse was asking if I brought my delivery bag and I didn't because that is not even what I came for. This was 10am. I went home and about an hour later around 11am, I returned to the hospital with my mother.<br />

You see when I got to the hospital I kept singing and praising and worshipping God waiting for the labour to start or water to break. Finally the health care staff decided to induce me at 3pm and before I finished a 10th of the drip the contractions started and in 10minutes of contraction the baby was born. God helped me give birth to a 4KG baby boy without any tear and without the expected kind of pain women are expected to go through during labour. This is my biggest child yet. God is AWESOME! It can only be God. I am a Christian and I know all these cannot be coincidence. They are God-incidence.<br />

Let me add that when I had desired to give birth 2 weeks before my sister's wedding, I had shared this desire with my husband and asked him to agree with me in prayer. If two or three would agree concerning anything it would be done unto them as they believe. I knew there was something to combined Faith, especially between a husband and his wife. See God gave me as I desired. I had this baby on the 13th of February. 14th of February would have been exactly 38weeks. Come on now! God heard my prayers and gave me the desires of my heart.<br />
<br />
I am a mother for the third time and God did it for me without pain or burdens. I am a testimony and I praise God.<br />
I HAVE SEEN THE GOODNESS OF THE LORD IN THE LAND OF THE LIVING AND I MUST TESTIFY OF IT. I couldn't just sit as a fool and allow this testimony not be told. We overcame the devil by the blood of the Lamb and By the WORDS OF OUR TESTIMONY.<br />
<br />
Let me emphasize that I was feeling so normal just before my labour and I was praising with that song (Onise Iyanu) because that was really what was on my mind. Among what you take from this story, let this be the most important: God can do anything! The Hebrew women kind of birth is not impossible with God. I didn't know how someone can be in labour and not feel pain. Until I experienced it. Faith like a mustard seed, can move mountains.<br />
<br />
Lord I am forever grateful for giving me this testimony. Baba God you are too much. Your name be exalted forever.<br />

Tell God your desires. Do one better than me, when you tell Him, believe! Get in agreement in prayer with your spouse or anyone that you can agree with in Faith.<br />

She lives in France and is currently taking some days our of her free week to clear her mind and head somewhere in the south-east of France, in a town called Lyon. I think everyone needs that kind of opportunity every now and again to get new perspective, breathe and just recuperate. </div>

While we were chatting she mentioned that one of her friends she had known for a long time had made a routine of having a meet up with her (and perhaps other friends) every two months. </div>

In that moment I got excited and thought to ask a few friends if they would like that kind of arrangement. But then I also wondered 'hope it won't sound too routine-like, boring, structural? I do not know if people generally like routines or if people just like to go with the flow. (Different strokes for different folks I reckon). </div>

...But then again I don't think routines are such a bad thing. I think it's nice if you can meet up with friends every so often. In fact as you get older you would probably need it as a 'routine' so you can plan time from your busy schedule. You probably often hear people say that couples should have date nights fixed (once a week or month) to keep up communication and keep alive the romance.</div>

Let's not get so caught up in the rat race that we forget to affect the lives of the people we love. Often to affect the life of someone is to know their needs, to know their needs is to talk to them and perhaps do so often (or routinely). </div>

Doing so in a relaxing environment may make it much more fun and make it easier for people to be themselves, open up, be vulnerable and let you know them. </div>

For friends too far to meet, good thing we have social media. Maybe video call your other friends Into the meet up? But I say there's something to face to face contact. Somethings are better conversed that way and some connections are better made that way. </div>

Your meet up does not have to be grand. It can be in your sitting room or friend's house or the restaurant not too far from your house and of course it can be grand, you can decide to go to Lyon, in the South-East of France or anywhere else.</div>

I have never thought of it exclusively, this way. Being one of those people who often says or remembers things like : what would posterity remember you for, this hit me differently. Yes it may matter what footprints we leave on the sands of time but even more important is what would happen to us on the other side of eternity. If we were to focus on eternity it would affect positively how we live our lives and indeed what we would be remembered for. If on the other hand we lay more emphasis on 'what would I be remembered for' we may miss the point and begin to leave our lives to please men rather than God. In the end our memories would fade from the people we love, they would fade from the earth but what won't fade is the life we end up with on the other side of eternity.</div>

where you have been can have an effect, as it usually does on your views and perception. You do not have to stay in the status quo though, you can break forth. A message hidden in here that I see is this: Make effort to build a home that is not broken and that would not yield broken children.<br />

While some people have the strength to quickly forgive themselves and move on, I can't yet say I am one of them but I am trying. I am probably one of those people that beat themselves up so much, maybe sometimes more than the crime. The funny thing is sometimes after you have beaten your self up, you still have to face the external consequences, so why suffer yourself twice? In any case we/I must learn to give ourselves some grace and forgive ourselves and move on from whatever wrong we have committed, after acknowledging them and making a conscious decision to move on.<br />

Ah the blame game. On the flip side of the self-beater is probably the blamer. The ones who never own up to their faults or responsibility. Who always think someone is responsible for their downfall. You have to rise up to the occasion, own your flaws,apologise and move on. In any case if someone is genuinely to be blamed or not, continuously blaming won't afford you healing. We must learn to heal beyond the attitude of the our defaulters. Also once I/we can get to a point where we call the past the past, leave it alone and move on, then we can build new frontiers.<br />

To make room for new, we need to learn to let go of the old. To breathe in, you must breathe out. To accept the positive is to let go of the negative.<br />

Some of us, maybe all of us have pasts that we have allowed dictate our present, at least I have done that. Wallowed in guilt so much that it drained me and impeded my ability to move forward in many other areas of my life.<br />
.........But isn't it comforting to know that with God no matter what our past or history says we can still rise from the ditch and become what God wants us to be. The prescription to get over the past like T.D Jakes says, is God. As I go to God asking His prescriptive word for me, I hope you find the courage to do the same.<br />

We all probably view love differenfly but to cling may not necessarily be the same as loving. Love is more giving than receiving and when we cling, we perhaps have a tendency to suck more out of people than we would give to them. Learn instead to depend totally on God than man. Men will fail Men. Sometimes, maybe not intentionally but nonetheless they will. Hold on instead to God.<br />

Oh how judgmental we can be sometimes. A few times to our own detriment. We have the proclivity to assume that because a certain thing is not going a certain way for someone that it must mean that the said person did not make enough effort. Don't get me wrong. That sometimes is the case. People sometimes may not do ALL they are required to do. But that is not always the case. Some women and men perhaps have given their all, tried their best and may still not be at the place they hope to be yet. The fact that she could in 'no wise lift herself up' may mean that she had tried or that her strength was not sufficient. Often as humans our strength is not sufficient. These people who haven't gotten 'it' though, would get there some day with God on their side, but you and I should be careful to assume that the infirmed woman lacks what it takes to rise again. Watch your criticism. before you decide that a person didn't pray enough, or read enough or hustle enough, bite your tongue (and thoughts) and perhaps pray for the person instead.<br />
<br />
I really did learn a lot from this book and I am in fact looking forward to another book. I am no ardent reader but I think I am wise enough to know I should better get to be one. Wisdom they say are hidden in books.<br />

Yam is a carbohydrate popular in Nigeria. Often it is eaten boiled in water or fried in groundnut or red oil.</div>

<b>Ingredients:</b></div>

1/4 medium size yam</div>
<div class="separator" style="clear: both; text-align: left;">
1/2 teaspoon of salt</div>
<div class="separator" style="clear: both; text-align: left;">
2 eggs</div>

Water</div>
<div class="separator" style="clear: both; text-align: left;">
Groundnut oil</div>

Red bell pepper sauce</div>

<b>Directions:</b></div>

Cut the yam into 1/2 to 1/4 inch slices. To a pot of water on the cooker, add 1/4 teaspoon of salt, the yam and allow to boil. Once the yam is soft but firm remove from the pot and place in a bowl of cold water to stop the cooking process. </div>

After about 2 minutes remove the yam from the cold water. Season the yam with the remaining 1/4 teaspoon of salt and then grease with groundnut oil. Divide the yam slices into two bowls. One would be oven cooked as is the other would be egg washed first. Grease foil paper and then place on the grilling tray in the oven. </div>

To one side of the grilling tray place yam slices from one of the bowls. </div>
Break open the eggs in a bowl and beat. The yam slices in the second bowl should be dipped one by one in the egg and then placed on the grilling tray.<br />
<br />
Once the yam slices have all been laid, close the oven and allow to cook at medium to high heat. After 30 minutes open the oven, flip the yam then close the oven. After 15 more minutes check to see if the other side is as brown as you like it. If not check every 5 to 10 minutes till it is as brown as you want it.<br />

This smoothie is easy to make as it requires the use of mainly three ingredients. Below is how I made Mummy's beetroot, carrot and apple smoothie.<br />

Wash the beetroots well and then peel. Was again then chop into small pieces. Wash the apples also and then chop them up. The carrot should be properly cleaned too. Scrap the back with a knife, then wash and chop the carrots.<br />

Get your smoothie maker or blender, make sure its clean, then pour in the chops of beetroot, carrot, apple and water then blend.<br />

Be sure to put the blender/smoothie off in between blends and add alittle more water if the content seems too stiff in the blender. Once the mixture is properly blended, pour into a cup or jar and chill for about 30 minutes to an hour then serve.<br />

How was your weekend? I hope you had a great one. I had a nice enough weekend and twice this information which we probably all have heard of before was reiterated to me. CONSISTENCY. To see result in whatever I do, I have to be consistent and so do you. So if you and/or I consistently do a thing that would produce a negative outcome, that is just what would happen, but if we carry out activities that would bring about positive outcome then that's what we should expect. Remember to keep doing what you need to do, be consistent, despite how you feel. That was my weekend lesson in a nutshell what was yours? This weekend I made pancakes and I made it three ways. Classic, Fruit filling and Hot chocolate powder pancake.<br />

Put the wheat flour, sugar, baking powder and salt in a bowl and stir. Add in the eggs, 4 table spoons of groundnut oil and then mix. </div>

Divide the pancake mix into three, that is have three potions of the pancake mix in separate bowls. To one of the bowls add the chopped water melon and, pineapple and mix. To another bowl add the hot chocolate powder and mix. The third bowl is the classic bowl. </div>

Place your pan on the cooker, add in a tablespoon of groundnut oil and pour in a scoop of the classic pancake mix. After the whole classic mix has been cooked move on to the fruit mix and then lastly the chocolate powder mix. </div>

It is relatively quick, easy to make and it requires limited number of ingredients. Besides being eaten as a main meal with a dipping sauce, you can carry them around as snacks.<br />
<br />
Here is my recipe for yam fritters.<br />
<b>Ingredient</b><br />
A small/soup bowl of grated yam (I used ordinary yam)<br />
3 tablespoons of powdered crayfish (optional)<br />
1/4 teaspoon of salt<br />
1 tablespoon dry pepper<br />
1 whole egg<br />

<b>Directions</b><br />
Grate yam, enough to fill a small bowl (soup bowl). To a larger bowl add in the grated yam, cray fish, pepper and salt then mix. Finally add the egg and combine well.<br />

Pour oil in a large pan and put on the cooker to heat up. Alternatively use a deep fryer. Use a tablespoon or your hand to scoop the yam mix into the hot oil and allow to fry.<br />
<br />
It should take about 5 to 8 minutes to fry each batch. If you want it less crunchy, take it out before it becomes dark brown.<br />

Put your rice in a pot of water, and put on a cooker to boil. Chop the suya, onions, green pepper and spring onions. Par boil the rice till it is almost done.Remove the rice from the cooker, pour into a strainer and run tap water over it. <br />

Put the empty pot back on the cooker, add the oil, suya, onions, green pepper and spring onions. Save some of the green bell pepper and suya (or beef) for garnish. Stir fry for 5 minutes then add the crayfish, knorr and dry pepper. Stir fry for another 5 minutes then add 150 mls of the beef stock, cover the pot and allow to steam. Once the water is dry you are ready to serve and eat. Serve with the saved suya or beef. Zobo is a relatively popular drink in Nigeria made by boiling dry zobo leaves in a pot of boiling water and then straining it when it is cold.<br />

That's the base.<br />

There are however many variations. Ginger could be added, lemon, lime, fruits and flavor. Sugar is usually added when it is cold.<br />

This post is not particularly about zobo but about making a smoothie with frozen cubes of zobo.<br />
You can make a basic simple zobo yourself or use a ready bought zobo. For those making zobo for this purpose, boil a handful of zobo in about 1 to 2 litres of water. When it is cold, filter it, add about 3 tablespoons of sugar, taste, if it is not enough, add a little more sugar but be careful not to add too much. Be health conscious. When the zobo is to acceptable sweetness, pour into your cube packs and place in the freezer.<br />

<b>Ingredients for the smoothie</b><br />
Frozen zobo cubes<br />
2 small Apples<br />
1/4 of a whole watermelon<br />
1/4 of a small pineapple<br />
100 mls of water<br />

Wash and chop your fruits.<br />
Put the Apple, pineapple, watermelon, zobo cubes and water into the blender or smoothie maker and blend till it is a smooth consistency. Remember to turn your blender or smoothie maker off intermittently.<br />

Once the mix is well blended, pour into a cup and enjoy.<br />

Put a pot of water on your cooker and turn to medium - high heat. Boil the spaghetti for about 15 minutes or till done. </div>

Remove the pot from the cooker when done, pour the spaghetti into a straining basket or colander and pour cold water on the spaghetti. Alternatively run tap water over the spaghetti in the basket. </div>

Pour water into your now empty pot and return it back to the cooker. Gently break in the egg. Cover and allow to cook. </div>

In a separate pan add your oil, carrot, onions and cabbage. Stir it as it fries. After about 5 minutes add pepper and knorr then stir for a further 3 minutes. At this point you add the spaghetti into the pan, cooked beef and the meat stock then cover and allow to cook for 4 to 5 minutes.</div>

<b>Directions</b><br />
<br />
Wash the plantains then peel the backs. Boil it till done but firm. Remove from heat. Transfer plantain to a bowl and mash up with a fork. Allow to cool down. You can put it in the fridge, not freezer, for about 30 minutes to aid cooling process. Chop the suya into small pieces and add to the mashed plantain. Add the egg, salt and pepper and mix.<br />

Put a pan on your cooker, add in 1 tablespoon of vegetable oil, then scoop in the plantain mix, as if you were making a pancake, allow to cook on one side then flip over to the other side. It should take 3 to 5 minutes on either sides.<br />
<br />
Serve with stew and beef, or just eat as a snack.<br />

Wash the potatoes, peel, cut in half and put in a pot of water on heat source to boil. Put your eggs in the same pot to boil. Be sure to wash the back of the eggs, in case it has any dirt that stuck on. Boil the potatoes till it is done but still relatively firm.<br />
<br />
While the potatoes is boiling, cut your spring onions and green pepper. The green pepper should be cut in strips. Note that you need the spring/leaf of the spring onions and not the bulb. Cut your large regular onions into small bits or strips if you please.<br />
<br />
Remove the potatoes and put in a bowl of cold water to stop the cooking process. The egg should be put in a separate bowl of cold water to ease peeling, when you are ready. Put 2 tablespoons of the oil in a pan and place as many half potatoes as you can in the pan. Once one side is brown enough, turn it so the other side browns. While it is browning you can further cut the potatoes into halves again. Once the other side is done, take it out of the pan and fry the remaining potatoes.<br />
<br />
When all the potatoes is ready, add them back in the pan, add your onions, spring onion leaves, green pepper and sardine. Drain the oil out of the sardine before you add it in. Put in the knorr, curry and stir. For those who like a little spice this is the time to add in the dry pepper based on your preference. Keep stirring for about 5 minutes till the salad in ready.<br />
<br />
Turn your heat source off.<br />
Remove your salad.<br />
Peel your boiled egg and serve with the salad.<br />

The concentrated <a href="http://cutiediamond.blogspot.com.ng/2016/08/concentrated-pepper-and-onion-chutney.html">chutney</a>?<br />
Use it as garnish as seen in the picture. Remember its an already cooked sauce, so there's no need to add it while frying, unless you want it warm.<br />

This is my #friend's leg, Uche @oochay_ I like her #shoes, unfortunately the different #angles of the shoes are not #captured here so you don't get to appreciate it as much as I do.<br />

But I digress.... This morning, I shared my #testimony with Uche and I want to share it with you. I woke up this morning and got a nodging to do something on my phone but I disobeyed. Later on, I went to the #kitchen to make #breakfast. I turned on the #knob on the #gas #cylinder. I fetched or had fetched water in a pot, I put in my plantain and proceeded to light the #matches. As I lit it I just heard and 'saw' puff. Apparently the knob on the cooker had been on and so gas was already coming out ready for #fire to #marry it. I thank #God that it wasn't beyond what happened today because it could have gone any other way. I could have decided to go wash plate and then #light the matches or do something else and that would have allowed more gas to build up. Maybe if I was attentive to the #morning nodge this would not have happened at all. But one thing Is sure, the #Grace of God was available for me. #God turned what could have been a #mess into a #testimony, #blessing and gave me appreciation for Him anew. Remember to listen to God. Remember to put your gas knobs off on all sides and it doesn't usually hurt to double check.<br />
