Gizzard Vegetable Sauce

Gizzard Vegetable Sauce

I was going to post this like 2days ago but I had one thing after another and after another to do, but I have found some time in between to share this with you.






To make my gizzard vegetable sauce you need:

8 Chicken pieces
8 large Gizzards
3 tablespoons Curry
4 Seasoning cubes (Knorr)
1/2 Nut meg
4 Onions
Water
Two 10grams sachets Chicken seasoning
1/2 a medium Cabbage
8 Carrots
6 Irish Potatoes
Vegetable oil

How to:
Cook your chicken and gizzard together. To the pot add in your chicken, gizzard, water, 2 tablespoons of curry, 2 sachets of chicken seasoning, 2 Knorr cubes, 2 tablespoons of pepper and some chopped onions. The water added should just about cover the meat. Put on a heat sauce , on medium heat. Allow to cook for about an hour, to allow the gizzard and chicken really tender up. While the meat is cooking, chop up your carrot, cabbage, potatoes and tomatoes.

Once the meat is cooked and the stock sufficiently reduced, till it's about 1/2 a cup left, take it off the heat sauce and pour the stock into a bowl. Remove the gizzard and cool under running water. Chop the gizzard into small pieces.
To the pot, which now contains only the chicken add the chopped potatoes and about 30mls of water, allow to the potatoes to soften, this would take 5minutes.

Once the potatoes is soft add 2 serving spoons of vegetable oil to the pot. Also add in the chopped gizzard, tomatoes and remaining chopped onion. Let the mix fry well. 
Then add in the carrot and allow to fry for 3 minutes. Add in the remaining curry, 2tablespoons of pepper and 1 Knorr cube and allow to cook for 2 more minutes. After 2 minutes add in the cabbage and last Knorr cube and stir.

 Allow the mix to cook for 3 minutes then add in the meat stock and allow to cook for 3 minutes more. Taste your sauce and add in whatever spice or seasoning you may still need.

Serve your sauce with rice, yam or potatoes. To my rice I added raw eggs just to give extra texture and difference to every chew. So par boil your rice per normal, wash and add back to the pot of water with a little salt to taste. Before you close the lid break in 2 raw eggs 
and cover the pot. Allow to cook ,
then break the cooked eggs with your spoon, stir in well and serve with your sauce.
