My sort of healthy pancake

Good morning diamonds!!!

How was your weekend? Hopefully you feel pumped and refreshed, ready to take on the new week!




I made light, airy pancakes this morning and it was a-m-a-z-i-n-g! Even if I say so myself, yes, yes.

So here are the ingredients:
2 whole eggs,
2 tablespoons melted butter,
150mls of water,
200mls of flour,
2 teaspoons of baking powder,
4 teaspoons of sugar and
1/2 teaspoon of salt.

Whisk the eggs in a bowl until it's really feels light and airy, about 3 minutes of whisking should do. Add in the melted butter, water and mix together. Then add in the dry ingredients, flour, sugar, baking powder, salt and mix well. Place your pan on a heat source, a cooking heat source, stove, gas cooker, electric cooker, firewood burner or whatever else you use. Regulate the heat such that it's on medium level. Pour in a teaspoon of oil when the pan is a little hot and add in a scoop or two of your pancake mix, depending on how thick you like it. Repeat until you have successfully fried the whole batch.

The pan cake is relatively healthy because of the little added sugar. However, depending on your sweet tooth level you could sprinkle on a little sugar.Better still you could add on fresh apple shavings or cut outs to keep the health profile of your pancake high. Sit and enjoy,
with something in your cup of course *wink*, something safe for the morning.
