Today's reinvented food or internationalized food is Moimoi. My friend Nabzie (@Nabzie111) tagged me on a post on instagram and that drove me to check out other posts from that IG page. You may want to call it Moimoilette, moizza or beanzza. It has the influence of Moimoi, omelette and pizza.
I made some changes to what she did with her own recipe and used what I had at home.
21/2 cups (500mls) of beans
2 red onions
21/2 spoons of dry pepper
11/2 knorr cubes
1/2 cup (100mls) of crayfish
1 teaspoon of salt
1 cup of Mixed veg
250grams of minced meat
The first thing you do is soak the beans for 3 to 6 hours, to ease the peeling process of the beans. You do not have to wait this long though. Dooneyskitchen has a shorter way to go about this and you can find that here.
After soaking the beans, wash it, rubbing the beans In between your palms to help remove the beans back. Pour water and allow to sit for some seconds then pour out the top portion to remove the beans peel. Repeat this a number a times till you have safely removed all of the beans peel.
Pour the beans into your blender. Add your washed and chopped onions and 2 spoons of dry pepper. You would need to add water about a 100mls to ease the blending process and prevent the blender from spoiling. Depending on the quantity of your beans and the strength of your blender you may need to blend in batches. *be sure to use the pulse button for some minutes to carry out the first few blending process before hitting the regular blending knob*
To the second batch of beans add the cray fish , 1 knorr cube and a pinch or 1/4 teaspoon of salt to the blender and blend.
Combine the two batches of beans mix into a food processor and process using the cake batter mixing tools. Process until the mix has been well incorporated. This should be between 10 to 15 minutes. Remember to turnoff your processor intermittently.
Once it is well mixed. Separate the egg yolk from the egg whites and add the egg yolks to the beans mix in the processor and process for about 2 minutes.
Fry the minced meat with the mixed vegetables, adding 1/2 knorr cube and 1/2 table spoon of pepper. This would be used for toppings, *you can use whatever other choice of toppings you like*
In a bowl use a hand mixer to whisk the egg white until soft peaks form.
Fold the beans mix gently into the egg white.
Put 4 tablespoons of groundnut oil in your frying pan, pour the beans mix into the pan till it covers the full width of the pan and half the depth of the pan. Turn the level of heat on your stove to low-medium heat and let it slowly cook away. High heat would make it burn and prevent it from cooking all the way through. At this point use a spoon to put the minced meat/vegetable mix into the beans mix already in the pan. Put as a little or as much of it as you like. Allow about 10 minutes to 15 minutes before flipping.
The reverse side should take about half the time it takes the first side to cook.
Flip gently to make sure the 'lette doesn't break. Allow the reverse side cook. Then remove from the pan.
And there you have it. Your moimoilette/moizza/beanzza. *You do not have to let your own brown as much as mine, i like the brown colour on it and i wanted the crisp that comes with it*.
